Strawberry Mostachon Recipe
This strawberry meringue cake is very popular in Mexico, specially during the holidays. It’s on of my favorite desserts to make with simple ingredients. Take this to your next holiday party for an extra treat!
Ingredients:
4 egg whites
1 cup of sugar
1 teaspoon of vanilla extract
1/2 teaspoon of baking powder
1/4 teaspoon of salt
1 1/4 cup of chopped walnuts
22 Ritz crackers crushed
For the frosting:
8 ounces of cream cheese
1/2 cup of sour cream
1/2 cup of powdered sugar
1 teaspoon of vanilla extract
1 lb sliced fresh strawberries
Steps:
Pre-heat oven to 350 degrees F
Spray a 9 in round cake pan with cooking spray
In an electric mixer, beat the egg whites on high speed until frothy
Slowly add vanilla, baking powder, and salt until combined
Keep beating the mixture until stiff peaks form
Fold in wanuts and Ritz crackers
Transfer to pan and bake for 30 - 40 minutes
For the frosting: Beat cream cheese, sour cream, powdered sugar, and vanilla extract on an electric mixer until smooth
Remove cake from oven and let it cool for 15 minutes
Spread frosting over cake
Garnish with strawberries
