Vegan Horchata Recipe
Horchata is a traditional Mexican drink that is made up of rice, cinnamon and vanilla. In this recipe we added almonds to the mix. The ingredients are soaked in water so they soften up, then blended and strained to make this delicious agua de horchata.
You can also add a shot of espresso to your horchata to make an horchata coffee and enjoy during the next chismecito session with your friends.
Ingredients:
1 cinnamon stick
1/2 cup brown rice
1 and a half cups raw almonds
1/2 cup pitted dates
Pinch of sea salt
4 3/4 cups boiling water
espresso shot (optional)
ground cinnamon to taste
Steps:
Toast the cinnamon stick in a pan for about 5 min.
In a bowl combine rice, almonds, dates, and salt.
Break toasted cinnamon in pieces and add to the bowl.
Pour boiling water in the bowl and let it sit until completely cool.
Transfer everything to a blender and blend increasing speed gradually.
Strain through a nut-milk bag, squeezing to collect all the liquid.
Serve over ice and add ground cinnamon.
Add espresso shot if desired.
